Finished cooking
After 8 hours, the pork has reached the magical internal temperature of 190 degrees. Time to set it aside to rest up before pulling it.
Pork update
Four hours in and the shoulders are already at 170 degrees. That's pretty fast for a grill that is set at 225. They sure look and smell good, though!
Let the smoke begin
It is now 0600, about ninety minutes before sunrise. We put the pork on the Traeger and set it at 225. Starting early should ensure that the pork is ready by 6pm, about an hour before guests arrive.
NYE pulled pork
The test run with a chicken went well last night, so today we are attempting traditional "low and slow" pulled pork. We start with a couple pork shoulders "Boston Butts" from Costco and apply a generous rub.
